Baked Potato with Mexican Beans

    Step1

    Soak kidney beans overnight, then cook until soft

    Step2

    Wash and remove blemishes from potatoes and place in a hot oven to bake

    Step3

    Sauté onion and capsicum for 2-3 minutes until softened

    Step4

    Add tomatoes, kidney beans and spices

    Step5

    Simmer covered for 20 minutes

    Step6

    Turn potatoes in the oven and cook until soft in the centre, test with a skewer

    Step7

    When cooked, place in a bowl, cut in half, add butter and some grated cheese, top with bean mix, guacamole and sour cream.
